60 medium-sized oysters, freshly shucked.
Vegetable oil, for deep frying.
2 medium eggs.
2 tablespoons of water.
Horseradish sauce, to taste.
1 ½ cups of flour.
1 ½ teaspoons of salt.
½ teaspoon of freshly ground black pepper.
Pinch of cayenne.

Drain the oysters.

Combine the eggs, water and horseradish sauce.

In a bowl, combine flour, salt, pepper and cayenne and mix well.

Dip the oysters in the egg mixture, then in seasoned flour to coat.

Place side by side but not touching on a platter and allow to dry for a few minutes.

When ready to fry the oysters, dip again in seasoned flour.
