Fried Oysters recipe

Ingredients:

36 oysters.
2 medium eggs, beaten.
Milk.
Salt and freshly ground black pepper, to taste.
Cornmeal.
½ cup of butter.
½ cup of olive oil.
Lemon wedges.

Directions:

Shuck the oysters.

Combine the beaten eggs and a little milk in a bowl.

Season to taste with salt and freshly ground black pepper.

Dip the oysters in the egg mixture, then in the cornmeal and allow to set on kitchen paper or foil for about 5 minutes before cooking.

In a large, thick bottomed frying pan or deep-fryer, melt the butter, then add the olive oil and bring to frying temperature.

Cook the oysters until they are golden brown.

Serve immediately with wedges of lemon.
