New Orleans Oyster Fritters recipe


1 cup of pancake mix.
1 pint of oysters and juice.
2 tablespoons of finely chopped onion.
1 teaspoon of baking powder.
1 medium egg.
Salt and freshly-ground black pepper, to taste.
¼ cup of cooking oil.


Combine the pancake mix, oysters, chopped onion, baking powder, egg, salt and black pepper.

Drop by tablespoonsful into hot cooking oil.

Brown on both sides.

Drain on paper towels.
